Easy Homemade Chocolate Chip Cookie Recipe
Cook time: 10-12 minutes | About 15 Cookies
Ingredients:
- 3/4 cup (168 g) unsalted butter
- 1 1/4 cup coconut sugar
- 1 egg + 1 egg yolk, room temperature
- 1 tablespoon pure vanilla extract
- 1 3/4 cup (220 g) flour, can substitute with gluten free flour, like Pam's 1 to 1
- 3/4 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 1 1/2 cups semi sweet chocolate
- 1 cup miniature marshmallows
- 3/4 cup pecan pieces flaky sea salt
Directions:
Brown the Butter: In a medium saucepan, over medium heat, lightly brown butter. Stir constantly until the butter foams, and has a nutty aroma. Let cool slightly.
Combine Wet Ingredients: In a large bowl, whisk together the cooled brown butter and coconut sugar. Mix in egg, egg yolk, and vanilla until just combined.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Stir in the chocolate chips, marshmallows, and pecans.
Chill the Dough: Cover the dough and chill in the refrigerator for at least 30 minutes, or up to overnight.
Bake the Cookies: Preheat oven to 350°F (177°C). Line baking sheets with parchment paper. Scoop dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until golden brown. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Tips:
- For extra chewy cookies, underbake slightly.
- For crispier cookies, bake for a few extra minutes.
- Experiment with different types of chocolate chips, such as dark chocolate, milk chocolate, or white chocolate.
- Add potato chip pieces for a salty crunch. Or use your leftover halloween chocolate candies for a fun treat, like these ones I made in 2017
Enjoy these delicious, chewy cookies!

I also can't have anything leave my house without looking totally cute. So I decided to package them in these white polka dot cellophane bags and designed some cutie allergy stickers since the recipe contains pecans and I made a gluten free batch, as well as a regular batch. Aren't they just adorable?! I love the little pecan mascot.
